  • Maple-Thyme Simple

    INGREDIENTS:

    2 cups of lightly packed thyme
    1 cup of sugar
    1 cup of water

    DIRECTIONS: 

    If your thyme is still young and the stems are green you don’t need to strip the leaves. If you have a well-established patch of thyme and your stems are a bit on the woody side you’ll want to strip the leaves to avoid getting an off-flavor in your syrup. Using a gentle pincher movement slide your fingers down the stem in the opposite direction of the leaf growth. This will remove the leaves and any fresh green stems. Some smaller, green stems are okay.

    Add the water and sugar to a small saucepan and heat over medium. Stir occasionally until the sugar dissolves, and the syrup comes to a gentle boil.

    Turn off the heat and remove the pan from the burner. Add your thyme and gently stir the leaves into the syrup. Now cover with a lid and let the thyme leaves steep in the syrup for 30 minutes. 

    Pour your syrup through a fine-mesh strainer into a jar with a tight-fitting lid.

    Keep your thyme-infused syrup in the fridge, and it should last around a month.

  • BUTTERLY PEA BLOSSOM

    INGREDIENTS:

    4-6 dried butterfly pea flowers
    2 cups hot water

    DIRECTIONS: 

    In a large pitcher, combine butterfly pea flowers and hot water. Allow 5-10 minutes to steep, develop a dark blue color, and cool completely. Pour in the butterfly pea flower water and watch the magic happen! The acidity from the lemon will turn the blue water purple.

  • PEAR-SAGE SIMPLE

    INGREDIENTS:

    2 pears cored and diced
    3-4 fresh sage sprigs
    1 cup sugar
    1 cup water

    DIRECTIONS: 

    Add water, sugar, sage, and pears to a small saucepan. Bring to a boil, stirring occasionally to dissolve the sugar. Turn off the heat once it boils and the sugar dissolves.

    Allow to steep for at least 10 minutes and strain. Use the back of a spoon to push down on the pears while straining to extract as much flavor as possible. Chill and store in the refrigerator in an airtight container for several weeks.

    Keep your pear-sage simple in the fridge, and it should last around 2-3 weeks.

  • HONEY OR AGAVE SIMPLE

    INGREDIENTS:

    1 cup honey or agave
    1 cup warm water

    DIRECTIONS: 

    Place the honey or agave and water in a saucepan set over low heat. Stir frequently and warm for 2 to 3 minutes, until the honey is fully incorporated.

    Let the mixture cool to room temperature, then pour it into an airtight glass container.

    Store the honey or agave simple syrup in the refrigerator for 10-12 days.
